Absolutely not. I would rather wear resort clothes for the week than lose or damage anything in my camera bag.
I'd prefer if you book lodging and transportation and I will take care of booking the flights.

I will require a stipend of $80 per day of travel for food/coffee/water at the airport and to be sure I have a tip for the transportation drivers and bellhops.
It honestly depends on the weather and the type of excursion. If the catamaran has an “indoor” part of the boat then yes absolutely. If the excursion has no type of coverage from rain, unfortunately I wouldn’t be comfortable taking my camera gear out.

It has never happened *knock on wood* BUT I have a network of trusted photographers who I have worked with previously that I would reach out to. In the event I can't attend, I would still be the main photographer selecting, editing, and delivering all of your images.
